Obtained from Cannonau grapes (100%) cultivated with espalier and spurred cordon training system, on soils derived from granite weathering, medium mix tending to sandy, which give great balance and minerality.
The vinification is made in stainless steel tanks, lasting 16-18 days at controlled temperature, during which daily pumping over and punching are carried out to allow the balanced extraction of polyphenols. The transformation of malic acid into lactic acid takes place immediately after the alcoholic fermentation. Before bottling, it rests for a few months in cement tanks and not roasted Slavonian oak barrels of large capacity.
It goes well with meat dishes and mature cheeses.
