A dry and fruit-forward wine that is both drinkable and food-friendly. Made with attention to detail, this wine demonstrates the characteristics of the Gavi terroir where fruitiness and minerality intermingle. In the vineyard, only the best buds are kept in the spring and a green harvest is carried out before veraison to ensure that only the top quality grape bunches are kept. The harvest is manual and fermentation with indigenous yeasts lasts about three weeks in stainless steel vats. Malolactic fermentation is started on a portion of the wine only to maintain freshness and vivacity.
TASTING NOTES: Yellow straw colour with greenish reflections. Aromatic nose of apricot, pear and white flowers. The mouth is spirited with a lively acidity and an almond and citrus finish.
ABOUT THE PRODUCER: ERNESTO PICCOLO
Lorenzo Picollo founded the winery in 1945. Today, Lorenzo’s son Ernesto takes care of the winemaking, and Ernesto’s son Gianlorenzo manages the vineyards. The vineyards lie mostly in Rovereto, Italy with four additional acres in Tassarolo, which is used for the production of their basic Gavi. Ernesto is very careful to give maximum expression to his vineyards and to the Cortese grape. The soil of the region is a mix of sand and clay. Their range of wines includes two Gavis – the basic Gavi and Gavi del Comune di Gavi Rovereto. Fermentation is in stainless steel and malolactic is allowed, but on a limited basis.
